Ingredients
8 small zucchini squash (weighing about 2 pounds)
4 tablespoons butter or margarine (1/2 stick)
1 medium size onion, chopped (1/2 cup)
1 teaspoon leaf oregano. crumbled
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons water
Directions
Wash squash: drain; pat dry (Do not pare.).
Cut into thin slices.
Heat butter or margarine until foaming in a large skillet.
Add onion; cook until soft but not brown.
Add squash: cook, stirring frequently, about 5 minutes.
Stir in oregano, salt, pepper, and water.
Cover; simmer for 15 minutes, or until the squash is crisply tender.
