Speedy Gazpacho Recipe

Ingredients
1 garlic clove
900 ml/1 1/2 pints tomato juice
8 tablespoons finely diced green pepper
8 tablespoons finely diced cucumber
8 tablespoons finely chopped spring onions
Salt and freshly ground black pepper
2 tablespoons white wine, optional
Lemon juice to taste
Directions
Peel and crush the garlic and mix with the tomato juice.
Put half the diced green pepper, cucumber and spring onions into small dishes so everyone can add these to the soup, as desired.
Blend all the other ingredients with the tomato juice.
Serve cold.
If you would like a more piquant flavour add either a little lemon juice or wine vinegar to the tomato juice or the fresh tomato puree.
