Ingredients

 
1/4 cup fat
 
2 cups sliced celery
 
2 cups sliced mushrooms
 
2 cups sliced onion
 
1/2 cup sliced green pepper
 
2 cups cooked pork or beef cut in 1/4-inch strips
 
1 cup chicken broth
 
1 tablespoon cornstarch
 
2 teaspoons Worcestershire sauce
 
1 teaspoon salt
 
1 (20-ounce) can bean sprouts drained and rinsed
 
1 tablespoon soy sauce
 
1 teaspoon preserved ginger, finely chopped
 
1 package chow mein noodles, heated

Directions

Melt fat in skillet, and gently saute celery, mushrooms and onion about 5 minutes.
Add green pepper, and saute 2—3 minutes longer.
Then add meat.
Mix chicken broth with cornstarch; add Worcestershire sauce and salt.
Stir this mixture lightly into meat and vegetables.
Bring to a boil.
Add bean sprouts, and toss mixture lightly with fork.
Cover pan, and heat 5 minutes.
Add soy sauce, and scatter ginger over top; then sprinkle noodles over all.
Accompany with hot rice.
