Special Yam Muffins Recipe
Bake up these special yam muffins the next time yams are in season. A muffin recipe with a twist, the yam muffin offers you the unique taste of yams baked along with cornmeal, coffee and cinnamon. The tabasco sauce adds a dash of spiciness that complements the taste of these special yam muffins.
Ingredients
| All purpose flour | 1 Cup (16 tbs) | |
| Granulated Sugar | 1/4 Cup (16 tbs) | |
| L tbsp baking powder 15 mL | ||
| Yellow cornmeal | 250 Milliliter | |
| 1/2 tsp salt 2mL | ||
| 1 1/4 tsp cinnamon 6mL | ||
| Eggs | 2 | |
| Strong coffee | 1/2 Cup (16 tbs) | |
| 1/4 cup butter or margarine,melted 50 mL | ||
| 1/2 tsp Tabasco sauce 2mL | ||
| 1 cup mashed yams or sweet potatoes 250 mL | ||
Directions
In a large bowl, combine flour, sugar, baking powder, cornmeal, salt and cinnamon.
Make a well in the center.
In a medium bowl, beat eggs.
Stir in coffee, butter, Tabasco sauce and yams.
Add to flour mixture and stir just until moistened.
Spoon batter into prepared ramekins or pan, filling cups two-thirds full.
(Baking may have to be done in batches.) If using ramekins, arrange in a circle.
Microwave on High for 4 to 5 1/2 minutes, rotating pan or rearranging ramekins halfway through cooking time.
A toothpick inserted in the center of each muffin should come out clean and dry.
These muffins are delicious served warm.
