Special Banana Muffins Recipe

Ingredients
1 cup granulated sugar 250 mL
2 eggs
1/2 cup softened margarine 125 mL
2 cups all-purpose flour 500 mL
2 tsp baking soda 10 mL
3 medium bananas, mashed
Directions
Preheat oven to 350 degrees F.
In a large bowl, cream together sugar and eggs until well mixed.
Add margarine and blend well.
Add flour and baking soda and blend until mixture resembles a loose dough.
Add bananas and stir just until moist and blended.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in the oven for 15 to 20 minutes or until golden brown.
