Special Veal Chops Recipe

4 veal chops
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup oil
1/3 cup onions, chopped
1/4 cup chicken broth
1/2 cup carrots, sliced
6 ounces canned tomatoes
2 tablespoons parsley, chopped
4 ounces mushrooms, drained and sliced
Directions
1) Lightly season veal chops with salt and pepper. Place seasoned chops and onion in hot oil and cook until browned.
2) Add the chicken broth, carrots, and tomatoes. Lower flame, cover, and simmer for 45 minutes to 1 hour or until veal is tender.
3) Add the parsley and mushrooms. Cook uncovered for 5 minutes. Remove veal chops, spoon sauce over 4hem and serve.
