Spatchcock Turkey Recipe

Ingredients
| Turkey legs and thighs | 2 , cut at joint into serving pieces | |
| Poultry seasoning | 2 Teaspoon | |
| Salt | 1 Teaspoon | |
| Lemons | 2 , thinly sliced | |
| Chutney | 1⁄4 Cup (4 tbs) | |
| Catsup | 1 Tablespoon | |
| Lemon | 1 , juiced | |
| Soft brown sugar | 1⁄4 Cup (4 tbs) | |
| Whole tomatoes | 4 (Fresh) | |
| Potatoes | 4 (Baked Or Sautéed) |
Directions
Rub poultry seasoning and salt into tur key.
Cover each with lemon slices.
In a small glass bowl or casserole combine chutney, catsup, lemon juice, and sugar.
On "simmer" setting, heat 1 or 2 minutes, until bubbling.
Spoon over turkey joints and cook uncovered on "roast" setting for 20 minutes.
Serve with baked tomatoes and baked or sauteed potatoes.
Tomato skins must be pierced in several places before cooking in microwave oven.
Garnish with lemon slices and parsley
