Sparkling Berry Salad Recipe

2 cups cranberry juice
2 packages or 1 package JELL O® Brand Sugar Free Gelatin, any red flavor
1 1/2 cups cold club soda
1/4 cup ere me de cassis liqueur (optional)
1 teaspoon lemon juice
1 cup raspberries
1 cup blueberries
1/2 cup sliced strawberries
1/2 cup whole strawberries, cut into fans
Mint leaves (optional)
Directions
Bring cranberry juice to a boil in medium saucepan.
Completely dissolve gelatin in boiling cranberry juice.
Stir in club soda, liqueur and lemon juice.
Chill until slightly thickened.
Reserve a few raspberries and blueberries for garnish, if desired.
Stir remaining raspberries, blueberries and the sliced strawberries into gelatin mixture.
Spoon into 6-cup mold that has been lighdy sprayed with nonstick cooking spray.
Chill until firm, about 4 hours.
Unmold.
Surround with reserved berries, strawberry fans and mint leaves, if desired.
