Spare Ribs with Barbecue Sauce Recipe

Ingredients

 18 4-inch-long spare ribs
 Olive oil3 Tablespoon
 Onion2 Ounce, chopped
 Garlic2 Clove (5gm)
 Dry mustard1/2 Teaspoon
 Oregano1 Teaspoon
 Thyme1 Teaspoon
 Ground coriander1/2 Teaspoon
 Paprika1 Teaspoon
 Sage1 Pinch
 Brown sugar2 Ounce
 Chilli sauce1/4 Pint
 Hot water4 Ounce
 2 tablespoons Worcester sauce
 2 tablespoons tarragon vinegar
 Lemon juice2 Tablespoon

Directions

Ask your butcher to cut spare ribs into 4-inch lengths, 18 in all.
Keep ribs in an ovenproof serving dish.
Barbecue Sauce: To make barbecue sauce, heat 2 tablespoons olive oil in a saucepan.
Add 2 oz. finely chopped onions to the hot oil and cook 5 minutes.
Add 2 finely chopped cloves of garlic.
Cook 1 minute longer.
Away from the heat, add 1/2 teaspoon dry mustard, 1 teaspoon oregano, 1 teaspoon thyme, 1/2 teaspoon coriander, 1 pinch sage, 1 teaspoon paprika, and 2 oz. brown sugar.
Mix well.
Stir in 1/4 pint chilli sauce, 4 oz. hot water, 2 tablespoons Worcester sauce, 2 tablespoons tarragon vinegar and 2 tablespoons lemon juice.
Mix well and simmer on low heat for 10 minutes.
Stir occasionally so that it does not stick to the pan.
1 hour before dinner bake the ribs in a pre-heated moderate oven, 350°F, Reg 4.
When ready to serve, brown under a grill.
Reheat Barbecue Sauce and serve separately.
Baked Potatoes make a good accompaniment for this dish.
