Ingredients

 
2 tbsp. butter
 
2 tbsp. chopped onion
 
1 tbsp. flour
 
2 c. chopped canned tomatoes
 
1/2 c. chopped celery
 
3/4 c. chopped green pepper
 
2 tbsp. chopped parsley
 
1/2 tsp. salt
 
Pepper to taste

Directions

Melt butter in small saucepan.
Saute onion in butter for 3 minutes.
Sprinkle flour over onion; stir in tomatoes quickly.
Add celery and green pepper; simmer for 20 minutes, stirring frequently.
Add parsley, salt and pepper; mix well.
Serve hot on meats or cold on salads.
Add 1 tablespoon cider vinegar to sauce when serving on salads if desired.
