Spanish Bacon And Rice Recipe
Ingredients
| Bacon Slices | 6 , chopped | |
| 1 cup long grain or converted rice | ||
| 1 1/2 cups hot tap water | ||
| Tomato sauce | 1 Can (10oz) | |
| Onion | 1/3 Cup (16 tbs), chopped | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Tomatoes | 1 Can (10oz) | |
| Salt | 1/2 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
Directions
Place bacon in a 2 qt.glass casserole dish.
Cover and microwave 4 to 5 minutes or until crisp.
Remove bacon and set aside.
Drain off all but 2 tablespoons drippings.
Stir in remaining ingredients except bacon.
Cover and microwave 18 to 22 minutes.
Stir in bacon.
Cover and let stand 5 minutes before serving.
