Directions

Place the oil in a ceramic or Pyrex pie plate and microwave 1 minute at HIGH.
Add the green pepper, onions, celery and thyme, mix well.
Microwave 4 minutes at MEDIUM-HIGH, stirring once.
Add the tomatoes, sugar, salt and parsley, mix well.
Cover and microwave 2 minutes at HIGH.
Let stand 5 minutes.
In the meantime, prepare the omelette.
Pour over the vegetables and serve.
