Spanish Garlic And Avocado Soup Recipe

Ingredients

 Unsalted butter2 Tablespoon
 Onion1 Medium, chopped
 4 cups rich chicken stock
 Garlic6 Clove (5gm)
 1 large ripe avocado, peeled, seeded and chopped
 Juice of 1/2 lime
 Buttermilk1 1/2 Cup (16 tbs)
 Ground pepper1 To taste
 Minced green onion tops or freshly snipped chives (garnish)
 Salt To Taste

Directions

Melt butter in 3-quart saucepan over medium heat.
Add onion and saute until soft.
Add stock and garlic and bring to simmer.
Cover and cook 30 minutes.
Let mixture cool slightly.
Puree in batches in processor or blender.
Transfer to large serving bowl.
Puree avocado and lime juice and add to stock.
Blend in buttermilk and season with salt and pepper to taste.
