Spanish Garlic And Avocado Soup Recipe
Glazed Ribs are a unique dish that you can serve at home for a grand dinner. I made this for my meat crazy husband for our anniversary dinner and he loved it! Try the Glazed Ribs and you will understand why!
Ingredients
2 tablespoons (1/4 stick) unsalted butter
1 medium onion, chopped
4 cups rich chicken stock
6 large garlic cloves
1 large ripe avocado, peeled, seeded and chopped
Juice of 1/2 lime
1 1/2 cups buttermilk
Salt and freshly ground pepper
Minced green onion tops or freshly snipped chives (garnish)
Directions
Melt butter in 3-quart saucepan over medium heat.
Add onion and saute until soft.
Add stock and garlic and bring to simmer.
Cover and cook 30 minutes.
Let mixture cool slightly.
Puree in batches in processor or blender.
Transfer to large serving bowl.
Puree avocado and lime juice and add to stock.
Blend in buttermilk and season with salt and pepper to taste.
