Ingredients

 Olive oil2 Teaspoon
 1/2 cup each diced onion and green bell pepper
 Garlic2 Clove (5gm), minced
 Tomato sauce1/2 Cup (16 tbs)
 Water1/3 Cup (16 tbs)
 Chicken broth package1/2
 1/4 teaspoon ground cumin, Dash pepper
 6 ounces skinned and boned cooked chicken, diced
 1 cup cooked long-grain rice
 2 ounces drained canned small white beans
 Parsley2 Tablespoon, chopped

Directions

In 10-inch skillet heat oil; add onion, green pepper, and garlic and saute over low heat until vegetables are tender, about 5 minutes.
Add tomato sauce, water, broth mix, and seasonings and bring to a boil.
Reduce heat and let simmer for 5 minutes; stir in remaining ingredients and cook until thoroughly heated.
