Spanish Cheese Lima Recipe
Ingredients
2 1/2 cups fresh lima beans
1 cup thinly sliced celery
1/2 cup finely chopped onion
2 tablespoons vegetable oil
3 tomatoes, peeled and chopped
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
Dash of red pepper
1 1/2 cups (6 ounces) shredded American cheese, divided
Directions
Cook beans in boiling water 15 to 20 minutes or until tender, drain.
Saute celery and onion in oil in a large skillet until onion is tender.
Add tomatoes, cover, reduce heat, and simmer 10 minutes, stirring frequently.
Stir in beans, Worcestershire sauce, salt, and pepper, simmer an additional 10 minutes.
Spoon half of bean mixture into a lightly greased 2-quart casserole; sprinkle with half of cheese.
Spoon remaining bean mixture over cheese.
Bake at 350° for 20 minutes.
Sprinkle with remaining cheese, bake an additional 5 minutes or until cheese melts.
