Spanish Squash Casserole Recipe

Ingredients

 
1 box Spanish Quick Brown Rice, uncooked
 
3 medium squash, of choice
 
1 medium bell pepper, chopped
 
1 lb (455 g) stewed tomatoes or 4 fresh tomatoes

Directions

Mix all ingredients in an oiled 9x13-inch baking dish.
Cover tightly with aluminum foil or tight fitting baking dish lid.
Bake for 30 minutes at 350°F (180°C) or until squash is tender.
