Spanish Short Grain Recipe
Spanish Short Grain is a nice rice dish which compliments any side dish. The tomato juice addition to this Spanish Short Grain recipe gives it a real nice and different flavor. You will make this again!
Ingredients
1 tbs (15 ml) olive oil
1 bell pepper, chopped
1 large onion, chopped
2 cloves garlic, minced
1 1/2 cups (355 ml) Short Grain Brown Rice, uncooked
3 cups (720 ml) liquid, tomato juice and broth or water
14 1/2-oz can (435 g) chopped tomatoes, strained, with juice reserved pinch cayenne pepper, optional
Directions
Heat oil in 4-qt thick-walled skillet or saucepan with tight-fitting lid.
Saute bell pepper, onion and garlic in oil briefly.
Add rice and stir.
Add liquid, including juice from tomatoes, to equal 3 cups.
Bring to boil, reduce heat to low, cover and simmer for 30 minutes.
Add tomatoes, cover and continue cooking for another 15 minutes.
