Spanish Sauce Recipe

Ingredients
2 tsp (10 ml) butter
1 small carrot, chopped
1 small onion, chopped
1 celery stalk, chopped
1 bacon slice, cut into pieces
2 cups (500 ml) beef stock
1 tbsp (15 ml) pureed tomatoes
1/2 cup (125 ml) mushrooms, quartered
1 bay leaf
3 parsley sprigs
Salt and pepper
2 tbsp (30 ml) kneaded butter (beurre manie)
Directions
– In a saucepan, melt butter and saute carrot, onion, celery and bacon without browning.
– Pour beef stock over vegetables and simmer for 15 minutes.
– Add pureed tomatoes, mushroom quarters and herbs. Season with salt and pepper and simmer for 15 minutes.
– Add kneaded butter and mix with wire whisk or beater. Return to saucepan and simmer until sauce thickens. Pour mixture through sieve. Garnish with finely chopped mushrooms and serve.
