Spanish Rice Recipe
This Spanish Rice recipe easily finds way to the top of my favorite list. The Spanish Spanish Rice makes a yummy Main Dish. It is always prepared with Vegetable as the key ingredient. You need to try this Spanish Rice just once! You'll certainly remain loyal to it forever!
Ingredients
2 teaspoons olive oil
1 medium-size yellow onion, finely chopped
1 medium-size sweet green pepper, cored, seeded, and diced
1 can(1 pound) low-sodium tomatoes, drained and chopped
2 cloves garlic, minced
1 1/2 cups long-grain white or brown rice
3 cups Chicken Stock or Vegetable Stock or low-sodium chicken broth
3/4 teaspoon dried thyme, crumbled
1/2 teaspoon salt, or to taste
1/4 teaspoon each ground turmeric and black pepper
1 bay leaf
2 tablespoons minced parsley (optional garnish)
Directions
1 In a medium-size saucepan, heatthe oil over moderate heat.
Add the onion and green pepperand saute, stirring occasionally, for 5 minutes or until softened.
Add the tomatoes and garlic and saute, stirring, for 2 minutes.
2 Add the rice, stock, thyme, salt, turmeric, black pepper, and bay leaf and bringtoa boil.
Lowerthe heat, cover, and simmer until the rice is tender and all the liquid has been absorbed 15 to 20 minutes for white rice, 35 to 40 minutes for brown.
Remove and discard the bay leaf.
Garnish each serving with parsley if desired.
