Rich Spanish Meat Loaf Recipe
Ingredients
| Ground meat | 1 1/2 Pound | |
| Peas | 1 Cup (16 tbs) | |
| Tomato sauce | 1/4 Cup (16 tbs) | |
| Seedless raisins | 1/4 Cup (16 tbs) | |
| Stuffed olives | 1/4 Cup (16 tbs), sliced | |
| Onion | 1 Large, chopped | |
| 1 small green pepper, seeded and chopped | ||
| Garlic | 1 Clove (5gm), chopped | |
| Eggs | 2 | |
| Oregano, salt, and pepper | ||
Directions
Toss together lightly but thoroughly meat, chick-peas, tomato sauce, raisins, olives, onion, green pepper, and garlic.
Add eggs to bind and season with oregano, salt, and pepper to taste.
Pack into loaf pan or 1 1/2 -quart casserole greased with bacon fat.
Bake in preheated moderate oven (350°F.) for 1 1/4 hours.
