Spanish Beef Roast Recipe
Ingredients
| Beef Rump or Sirloin Tip or Boneless Chuck Roast - 5-6 pounds | ||
| Stuffed Green Olives - 1 jar | ||
| All purpose flour | 4 Tablespoon | |
| Spanish Onions - 1, sliced thinly | ||
| Smoked Sausage or Frankfurter - 1, sliced thinly | ||
| Vegetable | 1 Ounce, canned | |
| Salt | 1 Teaspoon | |
| Liquid Red Pepper Seasoning - 1/4 teaspoon | ||
Directions
MAKING
1) Cut slashes about an inch and a half deep with a knife around the meat
2) Tuck an olive into each slash
3) Rub flour over the meat and fry the meat into a dutch oven or kettle
4) Keep aside and reserve 2 tablespoons of the drippings
5) Into the drippings saute the onion
6) Tip in the sausage and add in the vegetable juices, salt, red pepper seasoning
7) Return the meat to the oven
8) Bake for 3 hours at 325F till the meat is cooked through
9) Place the meat onto s serving platter
10) Into the gravy, add some flour and cook into a saucepan till thickened

11) Slice the meat and serve hot with the gravy
