Spanakle (Armenian Vegetarian, Spinach Soup) Recipe
Ingredients
1 pound fresh spinach
1 onion, chopped
7 cups water
1/2 cup coarse bulgur
1/2 cup tahini
1 cup water
1 teaspoon hot red pepper
Salt to taste
Directions
Wash, stem and chop the spinach (it should equal about seven cups).
In a saucepan combine the spinach and onion with the seven cups water.
Bring to boil over high heat.
Reduce heat and simmer until cooked, about fifteen to twenty minutes.
Add the bulgur.
Cook an additional fifteen minutes, or until the bulgur is tender.
Meanwhile, thin the tahini in the one cup water.
Gradually stir in about one cup of the hot spinach liquid.
Then slowly stir the tahini into the soup, stirring constantly.
Remove from heat.
Season with the red pepper and salt.
Add more water if the soup is too thick.
Chill.
Serve in individual bowls.
