Directions
Prepare Tomato-Onion Sauce; keep warm over lowest heat.
In a medium-size bowl, beat egg until blended.
Add bread crumbs, 1/3 cup of the Parmesan cheese, and poultry seasoning; stir until blended.
Add turkey; mix lightly until well combined.
Shape turkey mixture into 4 patties, each about 4 inches in diameter.
Melt butter in oil in a wide frying pan over medium-high heat.
Add turkey patties and cook, turning once, until browned on both sides (about 8 minutes total).
Transfer patties to a shallow rimmed baking pan or broiler pan.
Spread each patty with 2 tablespoons of the Tomato-Onion Sauce; then top each with 1 slice of the mozzarella cheese and 1 tablespoon of the remaining Parmesan cheese.
Just before broiling patties, in a 5- to 6-quart pan, cook spaghetti in 3 quarts boiling water just until tender to bite (10 to 12 minutes); or cook according to package directions.
Meanwhile, broil turkey patties about 4 inches below heat until cheese is melted and lightly browned (3 to 4 minutes).
Drain spaghetti well and transfer to a warm deep platter; spoon remaining Tomato-Onion Sauce over spaghetti, then top with turkey patties.
Garnish with parsley sprigs, if desired.
