Spaghetti With Tuna Sauce Recipe

Ingredients
1 8-ounce package spaghetti
2 tablespoons olive or salad oil
1 garlic clove, minced
1 2-ounce can anchovy fillets, drained and minced
1 14 1/2- to 16-ounce can tomatoes
1/4 cup tomato paste
1 teaspoon sugar
1/4 teaspoon oregano leaves
1/8 teaspoon coarsely ground black pepper
1 6 1/2-ounce can tuna, drained and separated into large chunks
1 3.2-ounce can (drained weight) pitted ripe olives, drained and each cut in half
2 tablespoons chopped parsley
Directions
1. In saucepot, prepare spaghetti as label directs; drain. Return spaghetti to saucepot; keep warm.
2. Meanwhile, prepare tuna sauce: In 3-quart saucepan over medium heat, in hot olive or salad oil, cook garlic and anchovies 3 minutes. Add tomatoes with their liquid, tomato paste, sugar, oregano, and pepper; over high heat, heat to boiling. Reduce heat to low; simmer, uncovered, 5 minutes to blend flavors, stirring occasionally. Stir in tuna, olives, and parsley; heat through.
3. To spaghetti, add half of tuna sauce; toss gently to mix well. Spoon spaghetti onto warm large platter. Spoon remaining tuna sauce over spaghetti.
