Spaghetti - 3/4 lb
Large ripe tomatoes - 4
Extra virgin olive oil - 1/4 cup
Garlic - 4 cloves , peeled, minced but still whole
Dried chili pepper - 1
Basil - 1 large sprig
Parmesan cheese, grated
Salt
Black peppercorns
Directions
GETTING READY
1 In a large pot, bring salted water to a boil.
2 Blanch the tomatoes.
3 Peel the tomatoes and cut them in quarters.
4 Remove the seeds.
MAKING
5 In a large, heavy bottomed pan, heat the olive oil.
6 Add the garlic cloves and cook gently until they are pale golden brown.
7 Crumble the chili pepper into the saucepan, stir well.
8 Add the tomatoes, a pinch of salt, and 2 basil leaves.
9 Cook, uncovered, over high heat for 5 minutes, stirring occasionally.
10 Remove from the heat.
11 Tear the rest of the basil into small pieces.
12 Cook the spaghetti in the boiling salted water until just tender but still firm.
13 Drain well.
14 Add to the tomatoes and cook for 1 minute, stirring.
15 Remove from the heat.
16 Stir in the Parmesan cheese, plenty of freshly ground pepper, and the basil.
