1 three pound chicken, disjointed
 
1/2 cup butter
 
1 teaspoon salt
 
1/2 cup chopped celery leaves
 
1 small onion, chopped
 
1 cup boiling water
 
1 pound mushrooms, sliced thick
 
3 tablespoons flour
 
Heavy cream
 
2/3 cup grated Romano cheese
 
1/4 cup dry sherry
 
1 pound of spaghetti, cooked according to package directions

Directions

1. Brown the chicken in three tablespoons of the butter. Add the salt, celery, onion and water and cover. Simmer until the chicken is tender, about thirty minutes. Cool, bone the chicken and cube the meat. Strain and reserve the broth.
2. Saute the mushrooms in two tablespoons butter until tender. Add the chicken.
3. Melt the remaining three tablespoons of butter in a saucepan, add the flour and stir with a wire whisk until blended. Meanwhile, add to the chicken broth enough cream to make three cups of liquid. Bring to a boil and add all at once to the butter-flour mixture, stirring vigorously with the whisk. Stir in the cheese and add the chicken and mushrooms. Stir in the sherry and heat but do not boil. Correct the seasonings.
