Ingredients

 
1 large spaghetti squash (about 4 lbs), halved stem to blossom end, seeded
 
1 lb 90% lean ground beef
 
1 1/2 tsp minced Food You Feel Good About Peeled Garlic
 
1 pkg (8 oz) Food You Feel Good About Cleaned & Cut Mirepoix
 
1 cup Food You Feel Good About Chicken Culinary Stock
 
1 jar (16.5 oz) Italian Classics Bolognese Sauce
 
1/2 cup organic milk
 
1 Tbsp chopped fresh basil
 
Salt and pepper to taste
 
1/4 cup grated Italian Classics Pecorino Romano cheese (Cheese Shop)

Directions

1. Place squash, skin side up (one half at a time), on microwave-safe dish; cover with microwave-safe plastic wrap. Microwave on HIGH 10-12 min, until tender. Let rest covered 10-15 min, until cool enough to handle; carefully remove plastic wrap to avoid steam.

2. Run tines of fork lengthwise over cut surface of squash to loosen spaghetti-like strands; scoop out strands. Set aside and keep warm.

3. Brown beef in large skillet on MEDIUM 2-3 min, stirring occasionally; drain well.

4. Add garlic and mirepoix; cook, stirring, 3-4 min. Add broth; heat to simmering. Add Bolognese sauce; simmer 10 min. Add milk; simmer 5 min. Season to taste with basil, salt, and pepper. Serve sauce over squash; top with grated cheese.
