Easy Spaghetti Frittata Recipe
Ingredients
1/8 pound thin spaghetti, cooked, drained, rinsed, and cooled
1 egg, beaten
2 tablespoons fresh-grated Parmesan or Romano cheese
Salt and pepper to taste
Pinch each of oregano and basil
Olive oil for frying
Directions
Blend all the ingredients together, and brown on one side in a small frying pan in a bit of olive oil.
Top with more cheese, and place under broiler until crusty and brown on top.
