Spaghetti Alla Trevigiana - Treviso Spaghetti Recipe
Ingredients
| Spaghetti | 320 Gram | |
| Pancetta - 100 grams, cut into fine strips | ||
| Egg yolks | 4 | |
| Olive oil | 10 Milliliter | |
| Onion | 40 Gram, chopped | |
| Rocket | 1 Cup (16 tbs) | |
| Radicchio leaves - 4 | ||
| Parmesan | ||
| Salt | To Taste | |
| Black pepper | 1 | |
Directions
MAKING
1. Take a saucepan, add plenty of salty water and cook spaghetti in it.
2. In the meanwhile, take a skillet, add little oil and brown the chopped onions.
3. Stir in pancetta and cook well.
4. Drain the pasta and tip it into saucepan and saute it with rocket, radicchio leaves, salt and black pepper.
5. Add beaten egg yolks and stir it well with the pasta mixture until it starts to scramble.
6. Finally stir in parmesan for seasoning.
SERVING
7. Serve the Treviso Spaghetti hot with a glass of wine.
