6 cups broth of choice
 
Mixed minced fresh herbs
 
SPAETZLE
 
1 egg, beaten
 
1/2 cup milk
 
1 teaspoon butter, melted
 
1/2 teaspoon salt
 
5 tablespoons unbleached flour

Directions

To make spaetzle, combine egg, milk, butter and salt.
Beat in flour.
Bring broth to a boil.
Force spaetzle mixture through a colander or spaetzle spoon into gendy boiling broth.
Cook 3 minutes until spaetzle rise to top.
Simmer 3 more minutes.
Sprinkle with herbs.
