Ingredients

 
2 cups dry soybeans
 
3 tablespoons unrefined oil
 
1/2 cup chopped onion
 
2 celery stalks, chopped fine
 
1 1/2 cups dry whole wheat bread crumbs
 
1 egg
 
1 teaspoon sage
 
2 tablespoons raw honey
 
2 teaspoons sea salt
 
2 cloves garlic
 
1/4 teaspoon cayenne pepper
 
1 cup homemade tomato sauce
 
Optional:
 
Grated cheese

Directions

Soak soybeans overnight and then cook until tender.
Drain.
Save the liquid for stock.
Put beans through food chopper (using coarse knife) or blend 1/3 cup at a time in a blender.
Heat a large frying pan.
Add oil and chopped soybeans.
Saute until brown.
Add other ingredients, tomato sauce last, saving 1/4 cup.
Mix lightly.
Shape into a loaf in a greased 9 x 5 loaf pan.
Bake 1 hour at 350°.
Pour remaining sauce over loaf.
Add grated cheese if you like and bake 5 more minutes.
Serve with tomato sauce or gravy.

I admit I was a bit skeptical about making a loaf out of soybeans, but to my surprise this turned out delicious, nutritious and a hit with my family!! I definitely recommend trying this one! I sure will make it again :-)
