Soy Bean Casserole Recipe
Ingredients
| Celery | 2 Cup (16 tbs), chopped | |
| Onion | 2 Ounce, chopped | |
| 1/4 medium green pepper, seeded and chopped | ||
| 1/2 packet instant chicken broth and seasoning mix dissolved in 1/4 cup hot water | ||
| 2 tablespoons plus 2 teaspoons flour | ||
| Skim milk | 2 Cup (16 tbs) | |
| 1 1/2 pounds cooked dried soybeans | ||
| Salt | 1 Teaspoon | |
| 2 slices enriched white bread, made into crumbs | ||
| 1 tablespoon plus 1 teaspoon margarine | ||
Directions
In saucepan cook celery, onion, and green pepper about 3 minutes.
Add dissolved broth mix; cook 5 minutes.
Blend in flour.
Slowly add milk and cook, stirring constantly until mixture thickens.
Add beans and salt.
Mix well.
Pour into a 1-quart nonstick baking dish.
Sprinkle evenly with bread crumbs.
Dot evenly with margarine.
Bake at 350°F.
for 30 minutes or until golden brown.
Divide evenly.
