Soy Bean And Nut Loaf Recipe
Ingredients
| 4 cups cooked and drained soybeans | ||
| Pecans | 1/2 Cup (16 tbs) | |
| Ground almonds | 1/2 Cup (16 tbs) | |
| Sesame seeds | 1/3 Cup (16 tbs) | |
| 1/3 cup flax seeds, soaked in warm water for 30 minutes and drained, optional | ||
| Vegetable oil | 2 Tablespoon | |
| Celery | 1 Cup (16 tbs), chopped | |
| Onions | 1 Cup (16 tbs), chopped | |
| Paprika | 1 Teaspoon | |
| Dried oregano | 1 Teaspoon | |
| Ground cumin | 1 Teaspoon | |
Directions
1. Preheat the oven to 350 degrees.
2. Grind the beans through a meat grinder and mix with the pecans, almonds, sesame seeds, and flax seeds.
3. Heat the oil and saute the celery and onions until tender. Add to the bean mixture with the remaining ingredients. Pack into a 9- by 5- by 3-inch loaf pan and bake for 1 hour. (Alternately, the loaf mixture may be formed into patties and fried in a little oil in a skillet.)
