Directions
Add oil gra- dually beating to be sure the mixture will emulsify.
Add the oil in larger -amounts and alternate with little more water as mixture thickens.
Mixture can be quite thin before lemon juice is added.
Add seasonings, then the lemon juice, and beat well.
Other seasonings, such as garlic or onion may be added.
For fruit dressings use pineapple juice intead of water in making the mayonnaise.
(Some recipes state, when using the beater method, use 1/2 cup water, and increase oil to 11/4 cups).
Liquidizer Method: Place water in li- quidizer and sprinkle soy flour on top.
Add salt and seasonings.
Start blending, adding oil gradually.
Remove from li- quidizer and mix in lemon juice thoroughly.
