Ingredients

 1 pound soy beans
 Enough water to cover beans
 Water3 Quart
 Salt1/2 Teaspoon
 Sugar1 Teaspoon

Directions

Wash the soy beans and soak overnight in enough water to cover.
Drain and discard the water; remove the skins from the beans.
Grind the beans very fine, and put in a cheesecloth bag.
Heat 3 quarts water to lukewarm and place the bag in it.
Squeeze the ground beans through the bag till only the pulp remains.
Wring the bag till it becomes very dry.
Put the pan on an asbestos pad and bring the milk to a boil; simmer for 30 minutes, stirring constantly.
Add sugar and salt and cool.
Serve either hot or cold.
