Soy-Marinated Sesame-Crusted Halibut Recipe Video

Chef Keith Snow will show us a nice Soy-Marinated Halibut that is encrusted in sesame seed and we are going to serve it with snow pea carrot and ginger stir fry.

Directions

SOY-MARINATED HALIBUT
Firstly, soak the halibut in soy sauce for about 10 minutes and not more than that.

Put some toasted black and white sesame seeds in some all purpose flour taken in a plate. Mix them together and pat.

Take the halibut and coat it with sesame seeds on the presentation side of the halibut.

Warm a stainless steel skillet and add some clarified butter to it. Take the halibut and lay it in the skillet by frying the presentation side. Give it a flip.

Finish cooking the halibut by placing it in the oven at 375 degrees for maybe 4 minutes.

SNOW PEA CARROT AND GINGER STIR FRY
Heat a stainless steel pan and use clarified butter for cooking.

As the butter heats up, start with adding minced ginger, then carrots, cook the carrots until they are just tender.

Then there are seasonal snow peas, washed and strained. Let them go in the pan and add some kosher salt and black pepper. Cook for about a minute only. Move them around inside the pan.

The stir fry is looking beautiful; stack it in a plate to form a bed for the fish. Lay the fish on the snow pea carrot and ginger stir fry.

For finishing the dish, drizzle some sesame ginger vinaigrette over the fish.
