Directions
Mix together the salt, sherry and 1 tablespoon bf the cornflour and marinate the fish in this mixture for about 30 minutes.
Dip the fish pieces in egg white, then in the remaining cornflour.
Heat the oil in a wok or frying pan until hot, then fry the fish pieces until golden, stirring them gently to separate each piece.
Add the ginger, soy sauce, sugar and stock or water.
Cook for 3-4 minutes, or until the liquid has completely evaporated.
