Southwestern Skillet Pot Pie Recipe

Ingredients
1 pound ground beef
1/2 medium onion, chopped
2 (15 ounce) cans mixed vegetables, drained
1 (15 ounce) can black beans, rinsed, drained
1 (4 ounce) can chopped jalapeno peppers,drained
3/4 cup water
1 envelope taco seasoning mix
3/4 cup flour
1/2 cup yellow cornmeal
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 egg
2 tablespoons vegetable oil
1 (4 ounce) can chopped green chiles
Directions
Brown the ground beef in a 10 skillet, stirring until crumbly; drain.
Stir in the onion and cook over medium-low heat until tender.
Add the mixed vegetables, beans, jalapeno peppers, water and seasoning mix.
Cook over medium-high heat until most of the liquid is gone, stirring occasionally.
Combine the flour, cornmeal, sugar, baking powder and salt in a medium bowl; mix well.
Add the milk, egg, vegetable oil and chiles; stir until moistened.
Spread the flour mixture evenly over the beef mixture in the skillet.
Cook, covered, over low heat for 30 to 35 minutes or until a toothpick inserted in the crust comes out clean.
Serve hot with salsa and sour cream.
