Southwestern Spinach Salad Recipe
Ingredients
| Picante sauce | 1/2 Cup (16 tbs) | |
| Italian salad dressing | 1/4 Cup (16 tbs), prepared | |
| Ground cumin | 1/4 Teaspoon | |
| Baby spinach | 4 Cup (16 tbs) | |
| Black beans | 1 Can (10oz), drained, rinsed | |
| 1 cup sliced/resh mushrooms | ||
| Sweet red pepper | 1 Medium, julienned | |
| 1/2 cup sliced red onion | ||
| 8 bacon strips, cooked and crumbled | ||
| 4 hard-cooked eggs, sliced | ||
Directions
In a small bowl, combine picante sauce, salad dressing and cumin.
In a salad bowl, combine spinach, beans, mushrooms, pepper, onion and bacon.
Drizzle with dressing; toss to coat.
Garnish with eggs.
