Southwestern Rice Recipe
Ingredients
| Butter/Margarine | 2 Tablespoon | |
| Onion | 1/3 Cup (16 tbs), chopped | |
| Chili pepper | 1/4 Cup (16 tbs), chopped | |
| 1 cup Brand Rice | ||
| Chicken broth | 1 Can (10oz), condensed | |
| 1 soup-can water | ||
| Cumin seeds | 3/4 Teaspoon | |
| Salt | 3/4 Teaspoon | |
| Worcestershire sauce | 1 Teaspoon | |
| Chopped black olives | ||
| Avocado slices for garnish, if desired | ||
Directions
In a large saucepan, melt butter or margarine.
Add onion, chili pepper and rice.
Cook, stirring often until lightly browned.
Add broth or consomme', water, cumin seeds, salt and Worcestershire sauce.
Bring to a boil and cover tightly.
Simmer 20 minutes.
Remove from heat.
Let stand, covered, until all liquid is absorbed, about 5 minutes.
Sprinkle with olives.
Garnish with avocado slices.
