Southwestern Hominy Recipe
Ingredients
| Vegetable cooking spray | ||
| 4 cups peeled, seeded, and chopped tomato | ||
| Onion | 2 Cup (16 tbs), chopped | |
| Hominy | 2 Can (10oz), drained | |
| Chili powder | 1 Teaspoon | |
| Garlic powder | 1/4 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Monterey jack cheese | 1/2 Cup (16 tbs) | |
Directions
Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
Add tomato and onion; saute until onion is tender.
Stir in hominy and next 4 ingredients.
Spoon into a 2-quart baking dish coated with cooking spray.
Bake, uncovered, at 350° for 25 minutes.
Sprinkle with cheese; bake 5 minutes or until cheese melts.
