Southwestern Garbanzo Beans Recipe

Ingredients
1 cup chopped onion
1 large clove garlic, chopped
1 tablespoon finely chopped fresh ginger
1 cup chopped ripe tomato
2 tablespoons + 2/3 cup water
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1/8 teaspoon cayenne pepper (optional)
2 cups cooked garbanzo beans, drained
1 tablespoon honey
1/4 cup chopped dates
1 tablespoon lime juice
1/2 lime, cut in wedges, for garnish (optional)
1 tablespoon chopped fresh cilantro, for garnish (optional)
Directions
MAKING
1) In a medium skillet, over medium high heat, sauté onion, garlic, ginger, tomato and 2 tablespoons water for about 5-8 minutes until tomato and onion becomes soften and absorbs liquid.
2) Mix in seasonings and cook the mixture briefly to allow blending of flavors.
3) Stir in beans, 2/3 cup water, honey and dates and allow the mixture to come to a boil.
4) Reduce heat and simmer, covered for 10-15 minutes and then pour in lime juice.
SERVING
5) Serve hot in a serving bowl and if desired, garnish with lime wedges and cilantro.
