1 1/2 cups fresh pineapple cubes
3/4 cup avocado balls
1 1/2 cups grapefruit segments
1 cup unsweetened apple or white grape juice
1 tablespoon lemon juice
2 tablespoons salad oil
fresh mint leaves for garnish
Directions
Combine fruit.
Pour apple or grape juice over all.
Chill.
When ready to serve, drain fruit, reserving 1/2 cup of liquid, and put fruit into sherbet or large wine glasses.
Combine reserved juice with lemon juice and salad oil.
Drizzle over the fruit in each glass and garnish with fresh mint leaves.
