Ingredients

 
23/4 Cups Unbleached Flour
 
1 Tbsp. Baking Powder
 
1 Tsp. Soda
 
1 Tsp. Cinnamon
 
1 Tsp. Nutmeg
 
1 Tsp. Ginger
 
1 Cup Chopped Pecans
 
2 Eggs
 
2 Cups Pumpkin Puree
 
1 Cup Sour Cream
 
1/4 Cup Light Molasses
 
3/4 Cup Brown Sugar

Directions

Combine the first seven ingredients and mix well.
In a smaller bowl, whisk the eggs, pumpkin, sour cream, molasses and sugar until sugar is dissolved.
Pour liquid ingredients into center of dry ingredients.
Stir quickly until flour disappears and spoon into greased muffin tins.
Bake until lightly brown.
Bake at 375 degrees 25 minutes
