Ingredients
6 large potatoes, scrubbed
SEASONINGS:
45 ml/3 tbsp sunflower oil
5 ml/1 tsp garlic salt
5 ml/1 tsp chilli powder
5 ml/1 tsp mixed spice
5 ml/1 tsp ground cumin
Freshly ground black pepper
Directions
Prick the potatoes all over with a fork.
Bake in a preheated oven at 180°C/350°F/gas mark 4 for about 1 hour or until soft.
Alternatively, bake in the microwave for about 4 minutes per potato (or according to the manufacturer's directions).
Cut the potatoes in half and scoop out most of the potato (use in a recipe needing mashed potato), leaving a 'wall' about 5 mm/1/4 in thick.
Cut each half into three wedges.
Brush all over with oil.
Mix the seasonings together then sprinkle evenly over the potato skins.
Place on a sheet of foil, if liked.
Barbecue for about 10 minutes, turning occasionally, until crisp and golden.
