Old Fashioned Southern Fried Chicken Recipe Video

Ingredients

 
1-2 chickens, cut up
 
1 cup kosher coarse salt
 
2 cups buttermilk
 
1 onion, sliced into rings and separated
 
1 tbs black pepper
 
1 tsp hungarian paprika
 
1 Tbs salt
 
scant 1/4 tsp cayenne pepper
 
2 cups flour
 
1 cup crisco
 
1/2 stick butter

Directions

Salt chicken on both sides in a pan in a single layer and let sit (refrigerated) for 2 hours. Rinse and drain chicken. Remove
skin if desired. Place chicken in a pan in a single layer and pour buttermilk over. Scatter onions on top. Cover and refrigerate for several hours.
Combine flour, pepper, paprika and salt. Shake chicken to remove most of buttermilk and dredge in flour mixture. Let sit for 5 mins.
to allow coating to adhere. Heat crisco and butter until hot. Fry chicken about 8 mins per side, turning once. Drain on brown
paper. Serve hot or at room temperature (or my favorite, cold the next day)

my grandmother used to make simply the best chicken, first she'd catch the bird, cut it's head off, place in boiling water pluck, and , hummm maybe she gutted it first like I do wild ducks. But wow could she make fried chicken-yum Looks good, but not healthy.
