Southern Dressing Recipe Video
Chef Keith Snow shows how to make a very simple southern corn bread dressing.
Ingredients
Corn bread
Button mushrooms
Green bell pepper
Organic Celery
Organic leeks
Sage (rubbed)
Chicken broth
Directions
Heat a skillet on medium heat.
Chop the button mushrooms. Then chop the bell pepper.
Put some cultured butter in the skillet and then some extra virgin olive oil.
Start with cooking mushrooms and bell pepper. Add a little black pepper on them.
Cook for a minute until the mushrooms cook down a bit, then add salt.
Throw in the chopped celery and leeks. Season with salt and pepper for the added ingredients.
Add more extra virgin olive oil if the dish looks dry.
When the vegetables are cooked down a bit and there is caramalization seen on the bottoms of the pan add the chicken broth to deglaze.
Move the vegetables with a spatula to remove the caramalization by rubbing the bottom.
Turn off the flame and add the rubbed sage to the vegetables.
Drop in the corn bread to the vegetables.
Pour in about 2/3 cup of chicken broth to the bread to make it soft. The dish should not be dry or mushy. Add more broth if required.
Give it a mix and its ready to get into the oven.
Bake it in the oven and the dressing is ready.
