Southern Vegetable Medley Recipe

This yummy southern vegetable medley swept me off my feet, I bet it will do the same to you. It is always prepared with vegetable as the most essential ingredient. Ingredients

 
4 ounces salt pork
 
4 fresh ears of corn
 
1/2 pound okra, sliced
 
1 cup water
 
1/2 cup chopped onion
 
1 to 2 teaspoons chili powder
 
1 teaspoon instant beef bouillon granules
 
4 medium tomatoes, peeled and cut up

Directions

Rinse and chop salt pork.
In 10-inch skillet cook salt pork till crisp.
Cut corn from cobs.
Add corn, fresh okra, water, onion, chili powder, and beef bouillon granules to salt pork in skillet.
Bring to boiling; reduce heat.
Cover and simmer 20 minutes.
Add tomatoes; cover and simmer 10 minutes longer
