Ingredients
1 pound medium-sized shrimp
1 small onion, chopped
1 small green pepper, chopped
1 small celery stalk, chopped
1 garlic clove, minced
3 tablespoons salad oil
1/4 teaspoon crushed red pepper
1 14 1/2- to 16-ounce can tomatoes
2 tablespoons dry sherry
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon thyme leaves
Directions
1. Shell and devein shrimp; set aside.
2. In 2 1/2-quart casserole or bowl, combine onion, green pepper, celery, garlic, salad oil, and crushed red pepper; cover with casserole lid or large plate. Cook at high (100% power) 7 minutes, stirring after 4 minutes, until vegetables are tender.
3. Stir in tomatoes with their liquid, sherry, salt, pepper, and thyme leaves; break up tomatoes with spoon. Cover casserole and cook at high 5 minutes or until tomato mixture is hot.
4. Stir in shrimp. Cover and cook at high 3 to 4 minutes, just until shrimp turn pink and opaque, stirring after 2 minutes and pushing uncooked shrimp to edge of dish.
