Southern Grits Casserole Recipe
Ingredients
| Water | 2 1/2 Cup (16 tbs) | |
| 1 cup quick-cooking grits, uncooked | ||
| Butter/Margarine | 3 Tablespoon | |
| Salt | 1 1/2 Teaspoon | |
| Pepper white | 1/2 Teaspoon | |
| Cayenne pepper | 1/2 Teaspoon | |
| Eggs | 3 , beaten | |
| Shredded Cheddar cheese | 1 1/2 Cup (16 tbs), divided | |
Directions
Microwave the water at HIGH until boiling in a 1 1/2 quart casserole, or use the conventional range to boil.
Add grits, butter, salt, and peppers to the water.
Cover with waxed paper.
Microwave at HIGH 5 minutes, stirring twice.
Stir some of the hot grits into the beaten eggs.
Stir in 1 cup of cheese and add egg-cheese mixture to grits.
Stir well to mix.
Microwave at HIGH 5 minutes.
Rotate dish 1/2 turn after 2 minutes.
Sprinkle the reserved 1/2 cup cheese on top of mixture.
Cover.
Microwave at HIGH 2 minutes or until cheese melts.
Let stand 3 to 4 minutes before serving.
